Fluffy Keto Pancakes



 If you haven't tried this recipe, then you haven't really had fluffy keto pancakes before! You should definitely try out these easy keto pancakes now!


Ingredients

  • ½ cup superfine almond flour
  • 2 tablespoons superfine coconut flour
  • 1 tablespoon powdered erythritol
  • ½ teaspoon baking powder
  • 3 medium eggs, room temperature
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons cream cheese (or heavy cream)


Instructions
  1. First, gather all your ingredients in one place.
  2. Then in a mixing bowl, combine almond flour, coconut flour, erythritol, cinnamon, and baking powder. Then add eggs, vanilla, and cream cheese and beat until smooth.
  3. You can also add in one tablespoon of melted butter or coconut oil, but this step is not mandatory.
  4. Next heat up a large non-stick skillet over medium-high heat making sure to spray with some cooking spray.
  5. Add about a tablespoon or two of this low carb batter to the hot nonstick skillet for each pancake.
  6. Then cook each pancake for 3 minutes on each side. Do this until all your batter is done.
  7. Lastly serve warm, sprinkled with sugar-free chocolate chips or sugar-free pancake syrup.
