Fluffy Keto Pancakes

Ingredients
- ½ cup superfine almond flour
- 2 tablespoons superfine coconut flour
- 1 tablespoon powdered erythritol
- ½ teaspoon baking powder
- 3 medium eggs, room temperature
- ½ teaspoon vanilla extract
- ¼ teaspoon ground cinnamon
- 2 tablespoons cream cheese (or heavy cream)
Instructions
- First, gather all your ingredients in one place.
- Then in a mixing bowl, combine almond flour, coconut flour, erythritol, cinnamon, and baking powder. Then add eggs, vanilla, and cream cheese and beat until smooth.
- You can also add in one tablespoon of melted butter or coconut oil, but this step is not mandatory.
- Next heat up a large non-stick skillet over medium-high heat making sure to spray with some cooking spray.
- Add about a tablespoon or two of this low carb batter to the hot nonstick skillet for each pancake.
- Then cook each pancake for 3 minutes on each side. Do this until all your batter is done.
- Lastly serve warm, sprinkled with sugar-free chocolate chips or sugar-free pancake syrup.
